All-Clad Cop-R-Chef 10-Inch Petite Braiser Lid
Product Review The Cop-R-Chef line from All-Clad presents a gorgeous bright copper exterior in a contemporary version of traditional French cookware. The interior of each piece is stainless steel, polished to resist sticking, while the key player is the sandwiched core of aluminum that wraps not only the bottom but the sides. As a result of this strong and conductive three-layer construction, Cop-R-Chef pans offer precise, even heating for making sauces, desserts, sautéing, and more. This lid fits the Cop-R-Chef 10-inch (2-quart) petite braiser, as well as any 10-inch All-Clad fry pan. The interior is bright stainless, the exterior bright copper. A solid stainless-steel handle is riveted on top for strength. All-Clad shapes the lid with a pronounced flat-topped dome, in order to fit over bulky cuts of meat and to send moisture and flavor back into the pan. The lid is oven-safe to 450 degrees F. While the Cop-R-Chef pots and pans are made in the USA, the lids, which are less critical for performance, are manufactured overseas to All-Clad's strict requirements. Before using for the first time, wash in hot, soapy water with a sponge or dishcloth. Rinse in hot water and dry thoroughly. Preheating: Most recipes recommend placing All-Clad pots on low heat for one or two minutes before adding foods. To fry without natural fats, try:
Prevent Water Spotting: After washing, rinse in hot water and dry immediately. Discoloration: Overheating can cause brown or blue stains. Food films, if not removed, will cause discoloration on the pot when it is reheated. Large amounts of iron content in your water may cause your pot to look rusty. Cleaning: To clean the stainless-steel interior, immerse the pot in warm water. Then, use a fine powder cleanser with water to form a paste. Apply paste using a soft cloth and rub in a circular motion from the center outward. Rinse in hot, soapy water, and dry immediately. Do not use oven cleaners or cleansers with chlorine bleach. Do not use steel wool. To clean the copper exterior, use a commercial copper cleaner to remove any tarnish or darkening. Rub in a circular motion. Rinse in lukewarm water. All-Clad does not recommend washing in a dishwasher, as harsh detergents will darken the copper.
