J.A. Henckels Twin Five Star 5-1 2-Inch High Carbon Stainless-Steel Boning Knife
Product Review The super-sharp 5-1/2-inch cutting edge and ergonomic handle make this a top-notch boning knife. Forged in Solingen, Germany, of a combination of ice-hardened carbon and stainless steel for edge retention, rust-resistance, and durability, this flexible blade swiftly removes bones from meat. When it is finally time to sharpen the curved blade of this knife, worry not, for it lends itself well to both a sharpening stone and steel. Once you've achieved the edge you want, a few quick sweeps along a steel each time you use the knife should keep the edge in fine condition. The ergonomic polypropylene handle lies comfortably in your hand, facilitating strain-free use; the metal bolster acts as a finger-guard; and the blade, bolster, and tang are fused into a seamless piece for easy handling and balance. The absence of rivets and recesses in the synthetic handle allows for dishwasher use. Finally! Still, the best way to care for this knife is to hand wash it with a mild soap, rinse it well, and then immediately wipe it dry. --Marcela Broussard Manufacturer Description
A Higher Standard in Knife Construction TWIN® Five Star knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, TWIN® Five Star knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, TWIN® Five Star knives use J.A. Henckels Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention. ![]() It's All in The Grip:
FEATURES:
Product Description Comfortable to hold and razor-sharp, the 5.5" Boning Knife by J.A. Henckels has a slim, flexible blade that quickly separates meat from bone. Part of the fine German cutlery manufacturer's Five Star collection, it features the company's FRIODUR ice-hardened stainless steel blade, crafted to hold its precise edge for a long time. The safe, ergonomically designed polypropylene handle has no sharp corners, so the strain on your hand is minimized. Reader Reviews Recommended for people who cut up chickens, turkeys, or other bone-filled pieces of meat. If you need to cut up a whole chicken, or do similar tasks working with meat on the bone, this knife is just lovely. The big handle is a great fit for my (average male) hands, giving much more control than traditionally shaped handles. The knife arrives reasonably sharp, and with a little maintenance on a honing steel gets notably sharper. The blade has a nice medium amount of flex: it doesn't bend when you don't want it to, but it does bend when you want it do. The best feature is the little curve at the back of the blade, an area which is especially sharp and deep. This ensures that you can cut off anything just by pushing the knife forward until the curved part reaches the aree being cut. Don't confuse this with a general-purpose cook's knife or utility knife or paring knife. It's a poor substitute for any of these, because of its specialized design. But if you want to cut up meat around the bones, it's a fine tool, well designed and well crafted.
